
BERRY SHORTCAKE (fat free and almost completely sugar free)
Source: Made it up myself (not like it's that creative), sorry for the lack of specifics as far as quantities go, I just wing it, it's really a preference thing how much you want of any one ingredient anyway.
INGREDIENTS
- any/all berries of your choice: strawberries, blueberries, raspberries, blackberries, etc. (however many you think you'll need)
- 1 sugar free angel food cake (superwalmart bakery sells this walmart brand cake). If you can't find this, I suppose a regular angel food cake can be used which is still low fat, but not sugar free.
- 1 sugar free fat free pudding mix (vanilla, lemon, white chocolate, chocolate, whatever you want)
- 1 cup fat free milk
- 1 cup fat free cool whip (can replace with 1 more cup of milk)
- fat free reddi whip whipped cream (can replace with fat free cool whip)
DIRECTIONS
- Several hours before you want to serve the shortcake (or the night before), cut up berries of your chioce, and sprinkle with splenda. You can also put some raspberry/strawberry sugar free jam on it if you want. Put in the fridge.
- Make up some sugar free fat free pudding with 1/2 skim milk and 1/2 fat free cool whip to get a thicker more mousselike texture. If you just want regular pudding or don't have cool whip, just use 2 cups of milk to make it like the box says. Vanilla, lemon, and white chocolate work well for this. Cheesecake, chocolate, or even banana flavor would probably be good too, but I haven't tried them. Or you could skip this step and just slap on some cool whip.
- Cut up cake into small pieces and layer some in a bowl if you're making in bulk, or just cut a few slices if you're making one or 2 servings.
- Top with some pudding, then berries.
- Repeat the layers if you have room in the bowl (picture is only one layer of each thing).
- Top with fat free whipped cream or cool whip to taste.
Yummy! And so low cal compared to the sugar junk shortcakes you'd get elsewhere. I took this to a party (the chopped version) and everyone loved it.
Alternative Version - Tropical Shortcake
Another great way to make this is to substitute pineapple tidbits (or fresh pineapple!) for the berries and make vanilla pudding with a few spoons of crushed pineapple with juice or just pineapple juice in place of some of the milk. You can also add some sugar free pineapple syrup if you have it (DaVinci makes this and you can buy it online). This makes almost like a pineapple upside down cake flavor. You can also top with toasted coconut and/or macadamia nut pieces to continue the tropical feel.
I imagine you could also skip the pudding, drizzle a little pineapple juice on the cake, top with pineapple and microwave, and then top with whipped cream for a warm version, but I haven't tried that.

Hey, thanks for the comment you left on my blog! It is really nice to hear from people who have gotten far in their weight loss journey, and who are continuing to do so. It's also very helpful to read about different food products that are good low-cal, low-fat alternatives to the other stuff out there.
